The numerous origins suggested for its name make clear reference to its resemblance to a sponge. In fact, in Latin, the metaphoric name is spongia, which in turn comes from the Greek spongìa. The sweet is called “Sfincia of Saint Joseph” as it is eaten in celebration of the anniversary of the Saint. It has some particular features, such as an irregular shape and a filling of ricotta cream and candied orange zest. Whatever its dialectic name may be or however it might be shaped, it must in any case, be fried and sweetened with honey or sugar.
