The Extra Virgin Sican Oil is taken primarily from three olive varieties: Biancolilla, Nocellara of Belìce and Cerasuola. The extraction takes place within twenty-four hours of the harvest by means of a physical and mechanical process that preserves, and ensures the inalterability of the characteristics of the oil. It is golden-yellow in colour with shades of intense green, has a fruity scent with hints of cedar, green tomato and almonds and a velvety flavour with a sweet aftertaste. The high quality of oil production in this district was recognised and awarded the D.O.P Valley of Mazara in 2001.
