The Giaraffa olive variety grows in diverse parts of central-west Sicily, notably in the Giuliana district, where efforts are being made towards the recognition of the Protected Denomination of Origin “Giarraffa of Giuliana”. The extracted oil, which is fruity and light, is characterised by its almond, artichoke and tomato leaf aromas. It is therefore an excellent condiment to dress both salads and fish or make focaccia bread more flavoursome. It is further distinguished by its hint of sweetness, which is accompanied by a light spicy bitter taste.
