Tabisca Saccense

Tabisca from Sciacca is a particular type of pizza deriving from rural peasant traditions. Once reaching up to around 60 cm in length, it is known today as the typical Sciacca pizza. The initial dough is that of the traditional pizza, before onion, sheep’s cheese, anchovies and black olives are added to it. It is usually served sliced on a wooden board.
